Easy, Yummy, Meatloaf



I know what you're thinking.....gross.  Meatloaf reminds me of being a kid, coming home starving to find. That's right. Meatloaf.  YUCK.  

A few months ago I had a craving for some meatloaf.  I hadn't had it in years!  I am not one who likes ketchup on her meatloaf, so I decided to search around for one that I would enjoy.  I stumbled upon this recipe and absolutely love it!  I did some minor alterations, so hopefully you will like my adjustments.

If you like things spicy and like meat, you are in for a treat.  And to all those who check my blog regularly, only to be disappointed that there is not a new post.  Sorry. Many of you know that I am pregnant and lately, I just don't want to cook.  I will hopefully get back into the groove of things soon :)  I promise!

Spicy Meatloaf

Cooking Time: 1 hour and 10 minutes
Preheat oven to 375 degrees

Ingredients:
1 egg
1- 1 1/2 lb ground meat (I prefer to use ground turkey)
1 (14 ounce) can Rotel diced tomatoes and green chilies. Undrained
1 sleeve buttery crackers, crushed (I like to use whole grain or wheat saltines, but you can use anything)
1 chopped onion
1 1/2 teaspoon garlic powder
1 1/2 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste

Directions:
Preheat oven to 375 degrees
Beat egg in mixing bowl.
Add ground meat, chopped onion, tomatoes and green chilies, and crushed crackers.  
Season with garlic powder, salt, and pepper. 


Mix until evenly combined


Pack into 9x5 loaf pan


Bake until no longer pink in center, about 1 hour.  If still pink, cook 10 minutes more or until no longer pink.

I used a really lean ground turkey breast.  Depending on your meat, your loaf may be darker.
