Chocolate Lovers Beware: Rolo Cookies



These cookies are absolutely amazing!

For one of Joe's Christmas presents, I did a spin off of the 12 days of Christmas.  One day, he got a big bag of rolos.  Little did he know, I had already made special plans for the bag.  My friend, Jenn, gave me this recipe around Christmas time and I am finally getting around to using it.  These cookies are delicious one of the most delicious cookies I have had.  I had Joe try one before work and he turned to me and said, "This is one of the most amazing things I have ever had!  Probably my 2nd favorite cookie!" One thing you need to know about Joe, he LOVES cookies.  When deciding what we should have at our wedding reception, he said, as long as there are cookies, he's fine with that.

These cookies are pretty rich, but if you love chocolate, you will LUV them!

Here's how to make them:

The Ingredients


2 1/2 cups flour
3/4 cup unsweetened cocoa
1 tsp baking soda
1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs 
2 tsp vanilla
48 rolos
2 TBS sugar (to roll the cookies in)

Directions
Combine flour, cocoa, and soda in a bowl.  Set Aside

Beat sugars and butter until well blended

Add eggs and vanilla

Add dry mixture and blend well.


The batter tastes super yummy and reminded me of fudge.

Shape cookies into small balls.  Press rolo into center of ball and cover with dough.


I pressed the rolor in the middle of the ball and then rolled it again to cover the entire Rolo.

Roll cookie in sugar.



Bake on ungreased cookie sheet at 350F for 8-10 minutes, until tops of cookies are slightly cracked.



I would definitely recommend eating these with a HUGE glass of ice cold milk.

  3. Let me know if you make them with Reeses, if I get to them first, let me know how they work out. We are more of a peanut butter family, then caramel. but they do look good, and I like the idea. i could see a lot of different candies you could put in there. :-) maybe the only difference would be baking time. You will definantly have to keep me updated on this one.
