Spinach and Salsa Eggs






I can already see your scrunched up nose in disgust.  Eggs?  Really?

Like many people, I am not a fan of eggs.  I know they are packed with protein and healthy for you, but most days, I can't stomach them.

When I have work in the mornings, I usually just grab some fruit and yogurt for breakfast.  But, when I have a day off (like today, yes!),  I like to make a good breakfast for Joe and I.  Joe made me these eggs a few months ago and now whenever he asks what I want for breakfast, I immediately respond Spinach eggs pleeeeaaaseee.  Since then, we have experimented with putting different things in our eggs.  Spinach and homemade salsa is by far our favorite.  My family gets together every year to make jars and jars, and yes, more jars of salsa.  We like to put really hot green chilies in ours.  Yum!

The eggs look pretty when cooked with spinach and salsa.  For some reason, they remind me of Christmas, ha ha.  I like these eggs because I CAN'T TASTE THE EGG!  It's such a simple dish to make for breakfast, but is delicious.

Here's how to make them:

I start out with whisking some eggs in a bowl.




Add some finely chopped spinach leaves.



Start cooking it in a pan on the stove.  When the eggs start to cook, add a few spoonfuls of salsa.

And wha-la (or however you spell it), spinach and salsa eggs!


So simple, but you will love them. :)

Snackin'

Remember the good ole kindergarten days?  


The naps you refused to take.  
The coloring and playing house with your classmates.
Storytime.
Learning.


Oh and I almost forgot everyone's most favorite part: SNACK TIME.  


Isn't it sad how we have abandoned many of those simple day to day events from kindergarten.  I don't know about you, but I would love to be required to take a nap every day!  


Even though I'm not in kindergarten, I love snack time!  Since everyone is trying to get healthy this year, I decided to post a yummy, easy snack that I enjoy.  Some may know this snack by it's special fun name: Ants on a log.  I enjoy it without the ants though :)




Celery and peanut butter, the perfect combination.  A healthy, delicious snack!  Joe and I went to the grocery store yesterday and bought several healthy items, one of them being celery.  Celery is a low calorie vegetable. (Eat as much as you want, and don't feel guilty, LOVE IT)  I also like to get natural peanut butter to make my snack a little more healthier than using regular peanut butter.  After getting home from the grocery store, I like to dice, chop, or whatever needs to be done to the fruits and vegetables that we buy.  I have found that if they are not already prepared and in the fridge, I forget about them, sitting in that bottom shelf in the fridge.  With them already prepared, I can grab and go.  While chopping, I started to remember how much I love celery and peanut butter.  Yum!  I made some for Joe and myself.  It was a great snack.

Wow! That's a lot of Food

To celebrate my Grandma's birthday, we went to Cracker Barrel.  We go to dinner every year, but this year, we went for breakfast.  I had some french toast, eggs, and bacon.  THIS is what Joe got:

What's in the meal, you ask?  Well some grits, apple sauce with HUGE apples, biscuits and gravy, hashbrown casserole, eggs, and a huge slab of ham.  Who knew there was such a meal that existed.  We were all so surprised when the plates kept piling up around Joe.  I don't think he even knew how much food he ordered. But, my husband loves food and ate everything but the apple sauce and nasty lookin' grits.  Why would someone eat grits?  The name alone makes me steer clear of them.  Yuck!

Hopefully what I have in store to make for him this week can top this meal!

So the next time you go to Craker Barrel, remember to order the country boy breakfast!

Chocolate Lovers Beware: Rolo Cookies



These cookies are absolutely amazing!

For one of Joe's Christmas presents, I did a spin off of the 12 days of Christmas.  One day, he got a big bag of rolos.  Little did he know, I had already made special plans for the bag.  My friend, Jenn, gave me this recipe around Christmas time and I am finally getting around to using it.  These cookies are delicious one of the most delicious cookies I have had.  I had Joe try one before work and he turned to me and said, "This is one of the most amazing things I have ever had!  Probably my 2nd favorite cookie!" One thing you need to know about Joe, he LOVES cookies.  When deciding what we should have at our wedding reception, he said, as long as there are cookies, he's fine with that.

These cookies are pretty rich, but if you love chocolate, you will LUV them!

Here's how to make them:

The Ingredients


2 1/2 cups flour
3/4 cup unsweetened cocoa
1 tsp baking soda
1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs 
2 tsp vanilla
48 rolos
2 TBS sugar (to roll the cookies in)

Directions
Combine flour, cocoa, and soda in a bowl.  Set Aside

Beat sugars and butter until well blended

Add eggs and vanilla

Add dry mixture and blend well.


The batter tastes super yummy and reminded me of fudge.

Shape cookies into small balls.  Press rolo into center of ball and cover with dough.


I pressed the rolor in the middle of the ball and then rolled it again to cover the entire Rolo.

Roll cookie in sugar.



Bake on ungreased cookie sheet at 350F for 8-10 minutes, until tops of cookies are slightly cracked.



I would definitely recommend eating these with a HUGE glass of ice cold milk.

Chicken Tortilla Soup

One of my favorite sites to check for recipes is allrecipes.com.  I find most of my recipes there.  I'm the kind of person who doesn't want to spend hours, or even half an hour on a recipe, just to find out that it tastes....blah.  So, when I turn to the internet, hoping to find a recipe that tastes good, I always end up on that website.  I also like getting recipes on here because it tells how many calories and fat are in each serving.

Luckily  this time, I didn't have to do the searching.  A friend posted this recipe on Facebook and I just had to try it.  I love, love, love, chicken tortilla soup.  We have a restaurant here in Utah called Zupas (shout out to my brother who works there!).  They have the BEST chicken enchilada soup.  Even though this isn't enchilada soup, it was still mighty tasty!

Joe gave it a 12 out of 5.....ha ha.  I asked him if he was going to enjoy me making recipes for this blog and all he could was grin.  He loves food!

Advice:  This probably makes enough to feed 4 people, so if you are cooking for a larger group, or family, you may want to double the recipe :)

Here is the recipe for all of you to try!  Enjoy!



Ingredients

  • 2 skinless, boneless chicken breasts
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground cumin
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup frozen corn kernels
  • 1 cup chopped onion
  • 1/2 teaspoon chili powder
  • 1 tablespoon lemon juice
  • 1 cup chunky salsa
  • 8 ounces corn tortilla chips
  • 1/2 cup shredded Monterey Jack cheese (optional)


Directions

  1. In a large pot over medium heat, saute the chicken in the oil for 5 minutes. Add the garlic and cumin and mix well. Then add the broth, corn, onion, chili powder, lemon juice and salsa. Reduce heat to low and simmer for about 20 to 30 minutes.  
  2. Break up some tortilla chips into individual bowls and pour soup over chips. Top with the Monterey Jack cheese and a little sour cream

Frosted and Homemade?

Frosted and Homemade?  Why the weird blog address?  To be honest, I sat at my computer for 2 whole episodes of Friends, trying to come up with something good.  The name is completely random, but not..... :)
Frosted, because I'm hoping to find and make so many new meals and treats for my family, and Homemade because I love being crafty and making things, especially for my home.  Joe and I have been in our new home for about 8 months now.  By the way it's decorated, you would think we just moved in a month ago.  I can't wait to have my home completely decorated! 

After being married for 2 years, I have to admit, I make the same meals over and over and over.......and over!  My poor husband.  I know he loves the cooking that I do, but I'm sure he could use a little variety. I can't wait to start finding and trying out new recipes.  Yum! Yum!  Hopefully I don't splurge and only make unhealthy (but extremely yummy) food.  I'm hoping to find a good variety of healthy foods to make.  Joe and I do not have any children yet, so this is my preparation period in my life.  I want my kids to love food, but love healthy food even more!

So, I hope you all enjoy the yummy food that I discover as well as the other treasures that I find.
